I'm assuming you know how to rip the folders to your hard drive.
1) Delete the SSIF folder
2) Delete the "Insert Disc 2" playlist (00007.mpls) & video (00010.m2ts/00010.clpi)
3) Copy disc 2 videos 00001.m2ts/00001.clpi & 00002.m2ts/00002.clpi to the Disc 1 folders renaming to something like 00101.m2ts/00101.clpi & 00102.m2ts/00102.clpi
4) Copy disc 2 playlist 00800.mpls to Disc 1 renaming to 00007.mpls
5) Use a hex editor to rename the files 00001.m2ts & 00002.m2ts in 00007.mpls to their new names. (Using BDedit you can only rename one of the files)
6) You'll also want to edit the bdmt_eng.xml in the META folder with a text editor and delete the Disc 1 reference.
7) Use DVDFab Virtual Drive to create mini iso and mount it. This rebuilds the SSIF folder using information in the playlists. The SSIF folder only contains symbolic links to the stream files, which is why you end up with double sized video when you copy this folder to your hard drive.
8) Using any DVD/Blu-ray burning software, such as Imgburn, use the write to image to create the full iso from the mounted mini iso
